Bourbon Pumpkin Bread

Fall is here, and we have the perfect recipes for Bourbon lovers who needs a little pumpkin spice in their lives. Try this moist, spiced, and delicious Bourbon pumpkin bread to add a little kick to your next brunch, or top with ice cream and caramel for a delicious dessert!

Ingredients:

1 cup packed brown sugar
1 cup white sugar
1 cup canola oil
1 15 ounce can pumpkin
1/3 cup water
3 eggs
1/4 cup bourbon whiskey – (amount of Bourbon can be adjusted with amount of water)
1 cup whole wheat flour
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground ginger
1 1/2 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon clove
1/4 teaspoon fresh ground nutmeg

Directions:

1. Preheat oven to 350. Grease 6 mini loaf pans or 3 loaf pans
2. In a large bowl whisk sugars, oil, water, pumpkin, and bourbon. Whisk in eggs
3. In a different bowl stir together both flours, spices, baking soda, baking powder, and salt
4. Fold dry ingredients into wet ingredients adding a little at a time
5. Pour evenly into pans
6. Bake for 40-45 minutes, you can also check it with a toothpick
7. Share and enjoy!

The bread is really yummy when topped with cream cheese icing, a vanilla glaze or butter! Bread can also be warmed up in the microwave for a tasty treat, breakfast, or snack.
