Teaches of Peaches is a sinfully delicious summer cocktail that incorporates the sweet plump harvest of summer peaches and savory garden rosemary. It’s beautiful sunset color just adds to the allure and reminds us of Summer’s delights.

Makes one cocktail.

☐ 2 oz Old Forester 100 Proof
☐ 1/2 oz of peach purée (see recipe below) or 1/2 of a muddled peach
☐ 1/2 oz peach rosemary shrub (see recipe below)
☐ 3/4 oz of honey simple syrup (see recipe below)
☐ Topped with two dashes of Angostura Aromatic Bitters

Add bourbon, peach purée, peach rosemary shrub, and honey simple syrup to a cocktail shaker and shake vigorously. Strain the drink onto ice in a cocktail glass and top with two dashes of Angostura Aromatic Bitters. Garnish with a burnt rosemary sprig.

Honey Simple Syrup:
☐ 12 oz jar of natural local honey
☐ 12 oz water

Mix both the honey and water in a small pot over low heat, stirring until combined. Pour into a bottle and store in refrigerator until use. Shelf life 1 month.

Peach Rosemary Shrub:
☐ 8 yellow peaches
☐ 4 rosemary sprigs broken apart
☐ 2 cups of sugar
☐ 1/4 cup of Prosecco vinegar

Peel yellow peaches and cut into small cubes place in a large container that can be sealed air tight. Add in rosemary sprigs and sugar. Muddle together until all of the sugar is absorbed by peach juice. Let macerate in the refrigerator for at least 24 hours. Then strain off syrup and discard the rest. Add in vinegar and put into a 1.75 liter bottle. Store in refrigerator. Shelf life 1 month.

Peach Purée:
☐ 8 yellow peaches
☐ 8 tsp water
☐ 4 tsp of sugar

Peel yellow peaches, cut into cubes and place them into the food processor. Add 8 tsp of water and 4 tsp of sugar. Set food processor to purée. Place purée in squeeze bottle and refrigerate. Shelf life of 3 days. Shelf life in freezer 3 months.
