Rabbit Hole Distillery (LOUISVILLE, KY) announced this week Dareringer Founder’s Collection Kentucky Straight Bourbon Whiskey Finished in PX Sherry Casks, a limited-edition bourbon that calls on historic wood from Spain to create a unique expression of the brand’s award winning Dareringer Kentucky Straight Bourbon Whiskey Finished in PX Sherry Casks.

Per the brand, Rabbit Hole Dareringer Founder’s Collection is an exceptional spirit that embodies founder and whiskey maker Kaveh Zamanian’s fascination with barrel aging and is defined by 60-year-old American white oak with an intriguing lineage.

Crafted by the Cabello family of the esteemed Casknolia Cooperage in Southern Spain, the historic casks that age Dareringer Founder’s Collection are made from rare, 60 year old wood that had been used to age a succession of PX sherry, brandy and PX sherry in partnership with three of Spain’s oldest and most revered producers.  When met with a special reserve Dareringer Straight Bourbon Whiskey that Kaveh had the foresight to hand-select and set aside for aging in #4 toasted and charred new American oak barrels, the result is a captivating, double-barrel bourbon with a bespoke flavor profile.

Dareringer Founder’s Collection reimagines Rabbit Hole’s award-winning Dareringer Kentucky Straight Bourbon Whiskey Finished in PX Sherry Casks through a more pronounced sherry profile. Comprised of 65% corn, 25% wheat and 10% malted barley, Dareringer Founder’s Collection derives its complexity from interaction with deeper PX sherry influences to reveal incredible depth. This cask-strength offering is 102.1 proof/51.1% ABV.

Per the brand, the experience of Dareringer Founder’s Collection opens with fragrant notes of custard, walnut, brown sugar and baking spices. On the palate, the spirit is refined and smooth with a pleasing viscosity that carries notes of cinnamon, oak, tobacco and stone fruit with blackcurrant, cherry and lemon influences, touched by a hint of Rabbit Hole’s signature floral note.  Dareringer Founder’s Collection cascades to a medium-to-long finish imparting notes of toffee and pecans with a kiss of light spice.

Rabbit Hole Dareringer Founder’s Collection launches this month. A total of 2,444 sequentially-numbered bottles will be released for sale at Rabbit Hole Distillery and for purchase at select retailers for a suggested retail price of $295. 

While Kaveh Zamanian encourages imbibers to enjoy Dareringer Founder’s Collection according to their personal preference, he suggests that the spirit is enjoyed at full strength or with a touch of water to reveal added layers of complexity.

The packaging of Dareringer Founder’s Collection is at once innovative and minimalist. The individually-numbered bottles are sealed with a gold cork and are placed in a wooden box designed to honor the whiskey it contains. Adorned with an engraved rabbit, the wooden box has magnetic front and back panels that may be removed to display the limited-edition whiskey.
