Rabbit Hole Distillery (Louisville, KY) this week released the newest member of its Distillery Series “Heretofore“, a double barrel Straight Bourbon finished in Apera Casks. If you’re like me, you may need a refresher on what Apera is;) Apera is the Australian name for dry sherry. The name Sherry is owned by the Spanish and the Port name is owned by the Portuguese, both are now under the control of the EU. Australia changed its name to Apera in 2010. Apera is a play on aperitif, or that’s the idea, and the wine formerly known as sherry makes for a wonderful aperitif.

About The Name “Heretofore”
Heretofore derives from the Middle English word ‘heretoforn,’ which traditionally means here before or before now. Playing off this
historic reference, we find that Heretofore is the perfect name for our American oak barreled straight bourbon whiskey finished in Apera casks. As the term apera itself is an homage to aperitif which is quite fittingly served before a meal.
